Asparagus Curry

Recipe Brief Description: Asparagus curry made with onion, coconut and some other spices.

Recipe Ingredients

  • Asparagus - 1 bunch (chopped)
  • Onion - 1 number (finely chopped)
  • Coconut - 3 tbsp (grated)
  • Red chili powder - 1 tbsp
  • Turmeric powder - 1/4 tbsp
  • Mustard seeds - 1 tbsp
  • Chana dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Curry leaves - 1 spring
  • Salt to taste
  • Oil - 1 tbsp
  • Cilantro - 3 tbsp (finely chopped)

    Cooking Time: 30 minutes

    Preparation Method:
  • Wash the asparagus and cut off the woody bottom ends. To cut the woody ends, hold the asparagus and bend it. The woody end will naturally break off.
  • Chop the tender part into small pieces.
  • Heat oil in a pan and add the mustard seeds. Once they start spluttering, add the chana dal and urad dal. Fry till the dals turn golden brown.
  • Add finely chopped onion and curry leaves. Let the onions brown a little.
  • Add the grated coconut, turmeric powder and chilly flakes. Fry for a minute.
  • Now add the chopped asparagus and salt to taste. Stir fry for 2-3 minutes. The asparagus tastes best when it is crunchy, so do not overcook.
  • Add the chopped cilantro and switch off the flame. Serve with rice and rasam, sambhar.
