Recipe Name: Carrot Halwa

Recipe Brief Description: Indian sweet made from a Carrot of finely grated, milk, and sugar and flavored with cardamom. The consistency is that of a thick pudding.
Carrot – 2 cup (grated)
Milk – 2 cup
Sugar - 1 cup
Ghee – 2 tbsp
Nuts – 1/4 cup (almonds and cashews)
Raisins – 1 tbsp
Cardamon powder - 1 tbsp
Cooking Time: 20 minutes
Heat ghee in a small pan and fry nuts, raisins. Keep aside.
Heat milk in a heavy bottomed pan and add carrot. Cover and cook on medium flame, stirring occasionally to avoid sticking on bottom.
After 15 minutes, when all the milk is absorbed by the carrot, add sugar and stir continuously.
After about 8 minutes, oil starts getting separated from the halwa. At this stage add cardamom powder, fried nuts, raisins and 1 tbsp ghee.Switch off the flame and serve hot/cold.
