Recipe Main Ingredient: Coriander seeds
Recipe Brief Description : A combination of different spices, with out garam masala cooking will not be complete. This can be store for several months in an air-tight container in a cool, dark place.
Coriander seeds – 4 tbsp
Cumin seeds – 1 tbsp
Black peppercorns - 1 tbsp
Dry ginger – 1 1/2 tbsp
Black cardamom – 4 pods
Cloves - 3/4 tbsp
Cinnamon - 2 inch
Bay leaves - 3/4 tbsp (crushed)
Cooking Time: 15 minutes
Heat a non stick pan in a medium flame and gently roast all the ingredients, expect the dry ginger.
Fry till they turn a few shades darker at a very low flame.
When spices are roasted turn off the heat and allow them to cool.
Once Cooled, remove the cardamom seeds from their skins and mix them back with all the roasted spices.
Grind them all together, to a fine powder. Store in an air-tight container in a cool, dark place.
