Recipe Name: Idli Poha Bhurji
Recipe Main Ingredient: Idli, Pressed rice
Recipe Brief Description : An upma made of leftover idlis and mix with poha and other spices.
Left over Idlis – 4 number
Pressed rice – 1/2 cup
Onion - 4 number (finely chopped)
Ginger paste – 1 tbsp
Oil - 3 tbsp
Cumin seeds - 1/2 tbsp
Mustard seeds - 1/2 tbsp
Green chilies - 2 number (chopped)
Turmeric powder - 1/4 tbsp
Fresh coriander leaves - 1/2 bunch (chopped)
Salt to taste
Cooking Time: 20 minutes
Wash poha and drain excess water. Keep aside.
Break the idlis and crumble them in the chopper. Keep aside.
Heat oil in a pan, add cumin seeds, mustard seeds and allow to splutter. Add green chilies, onion and stir for few minutes.
Add turmeric powder, poha and mix well. Add crumbled idlis and mix well.
Finally add coriander leaves, salt and mix well. Serve hot.
