Recipe Brief Description : Khandvi or patudi is layered Gujarati food made with gram flour, butter milk and spiced mustard seeds, turmeric.

Recipe Ingredients

  • Gram flour – 1 cup
  • Butter milk – 1 cup
  • Green chilies paste - 1 tbsp
  • Ginger paste – 1 tbsp
  • Salt to taste
  • Asafetida - 1 pinch
  • Turmeric - 1 pinch
    For the Tempering
  • Oil - 1 tbsp
  • Mustard seeds - 1 tbsp
  • Green chilies - 3-4 numbers (chopped)
  • Curry leaves - 1/2 bunch
  • Sesame seeds - 1/2 tbsp
  • Coriander leaves - 2 tbsp (chopped)
  • Coconut - 2 tbsp (grated)
  • Pomegranate (few pods)

    Cooking Time: 20 minutes

    Preparation Method:
  • Mix gram flour, ginger paste, chili paste, salt, asafoetida, turmeric and add the buttermilk and stir continuously to make a smooth batter and keep it aside.
  • Heat deep pan in low heat. Transfer all batter into the pan stirring constantly so that lumps don’t form. Avoid scorching by adjusting the flame and keep stirring till the batter thickness and cook for about 8 minutes.
  • Now, spread the mixture on an un-greased baking sheet or flat surface in a thin layers. Let it to cool. Cut into (2) 3” by 1” piece and roll up carefully into Khandvi. Arrange on a serving dish.
  • For tempering, heat oil and add the mustard seeds, asafoetida, curry leaves and red chilies stir for 30 seconds. Pour the hot oil with spice over khandvi. Garnish with cilantro and coconut. Serve hot.
