Recipe Name: Methi Toor Dal Kadhi

Recipe Brief Description : Methi kadhi is a popular maharashtrian curry prepared with fenugreek leaves and curd. This methi kadhi goes well with hot rice or rice kichadi.
Curd - 1 cup
Fenugreek leaves - 1 bunch (finely chopped)
Toor dal - 3 tbsp
Jaggery - 2 tbsp
Besan flour - 1/2 tbsp
Ginger paste - 1 tbsp
Cumin seeds - 2 tbsp
Green chilies - 2 number (chopped)
Turmeric powder - 1/2 tbsp
Hing - 1 pinch
Red chili - 4-5 number (broken)
Curry leaves - 8-9 number
Oil - 2 tbsp
Salt to taste
Cooking Time: 20 minutes
Prepare besan paste. Mix together the curd, water, besan, turmeric powder and salt. Make a smooth paste.
Grind ginger, cumin seeds, green chilies, jaggery and asafoetida in to a smooth paste. Use little water if required.
Cook toor dal and fenugreek leaves together in a pressure cooker. Take 2-3 whistles.
Combine together the ginger paste, besan paste and cooked toor dal.
Heat oil in a pan. Add mustard seeds. When mustard seeds splutter, add curry leaves and red chili pieces. Stir for a few seconds.
Add toor dal mixture and salt. Add enough water to get the kadhi consistency. Bring it to boil. Simmer for 3-4 minutes. Serve hot with rice.
