Recipe Brief Description : Moong Dal Halwa is a popular dessert from the state Rajasthan. It is a delicacy of the state of Rajasthan. It is a rich, creamy and pudding-like dessert. Made with split yellow moong dal.
Split green gram - 1/2 cup
Ghee - 1/2 cup
Sugar - 1/2 cup
Cardamom powder - 1 tbsp
Cashew nut - 1 tbsp (chopped)
Raisins - 1 tbsp
Almonds - 1 tbsp (chopped)
Cooking Time: 30 minutes
Wash the split green gram, drain and soak in water for 4-5 hours.
After 4 hour drain excess water and make a thick coarse paste of split green gram, use very little water.
Remove from the blender jar and set the paste aside.
In a pan add 2 cup of water, sugar, cardamom powder, saffron and bring to a boil. Switch off the flame.
Heat ghee in a pan add dal paste and fry it for 15 minutes 15 mins or until the dal becomes crumbly and there should be a slight color change.
Then add in the sugar water. Cover and cook the dal with the sugar water on low – med heat until the dal is cooked and water is absorbed by the dal.
In a small pan add 2 tsp of ghee, cashews, almonds, raisins and fry them till golden.
Open cover and cook for 5 more mins. Finally add in nuts and raisins for garnish. Serve warm.
