Recipe Brief Description : Palak Methi and Corn Subzi is an interesting subzi because usually we think that sabzi means, it will be in color like green or red, but her this subzi it in white color and taste very good.
Sweet corn - 1/4 kg
Feugreek leaves - 1/2 cup (chopped)
Spinach - 1 cup ( shredded and blanched)
Cardamom - 3 number
Cloves - 2 number
Bay leaves - 1 number
Curd - 1/2 cup
Oil - 1 tbsp
Salt to taste
Onion - 1 cup (chopped)
Ginger - 1tbsp
Garlic - 1 tbsp
Green chilies - 1/ tbsp
Cashew nuts - 1 tbsp (broken)
Ghee - 2 tbsp
Cooking Time: 30 minutes
To prepare gravy. Heat the ghee in a pan, add the onions and stir till they turn translucent.
Add the garlic, ginger, green chilies and cashew nuts and cook for about 1 minute. Remove and keep aside to cool.
Add 2 tbsp of water and grind in a mixer to a fine paste.
Heat the oil in another pan, add the cardamoms, cloves and bayleaf and stir for 1 minute.
Add the white gravy and curds and let it simmer on low flame for 5 minutes or till the paste cooks.
Add the corn, spinach, fenugreek and salt and bring to boil. Serve hot with roti or chapathi.
