Potato Carrot Soup

Recipe Brief Description : Potato carrot soup it's a tasty, medium sweet spiced and flavored with fresh thyme.

Recipe Ingredients

  • Potato – 2 number (peeled and chopped)
  • Carrot – 2 number (peeled and chopped)
  • Bay leaf - 1 number
  • Black peppercorns – 1/2 tbsp
  • Vegetable stock - 2 cups
  • Thyme (Doddapathre) - 2-3 sprig
  • Oil - 1 tbsp
  • Garlic - 3-4 cloves (crushed)
  • Onion - 1 number (chopped)
  • Milk - 1 cup

    Cooking Time: 20 minutes

    Preparation Method:
  • To prepare Vegetable stock, boil mixed vegetables and drain. This drained water is called vegetable stock. (extract the maximum flavor from mixed vegetables)
  • In a cooker add potato, carrot, bay leaf and peppercorns. Add vegetable stock, salt, thyme and close the cooker and wait for 3 whistle.
  • Open the lid once the pressure is completely reduced. Allow the mixture to cool down to room temperature. Remove the thyme sprigs and bay leaf. Transfer into a mixer jar and blend to a smooth puree.
  • Heat oil in a non-stick pan, add garlic and onion and stir till the onion becomes light brown. Add the puree and mix well and let the mixture get heated through.
  • Add milk and crushed peppercorns and mix well. Adjust the consistency by adding more stock if the mixture is too thick. Serve hot.
