Vada Pav

Recipe Brief Description : Vada pav is one of the most popular snack dishes of Maharashtra, small balls of these boiled and spiced potatoes are made. Special chutney from garlic is made, know as vada pav chutney.

Recipe Ingredients
For the Vada

  • Potato – 3 number (boiled and mashed)
  • Oil – 1 tbsp
  • Mustard seeds - 1/2 tbsp
  • Asafoetida – 1 pinch
  • Curry leaves - 7-8 numbers
  • Garlic paste - 1 tbsp
  • Green chilies - 2 number (chopped)
  • Ginger paste - 1/2 tbsp
  • Turmeric powder - 1/4 tbsp
  • Red chili powder - 1/2 tbsp
  • Dry Mango powder - 1/2 tbsp
  • Lemon juice - 1 tbsp
  • Salt to taste
    For the Batter
  • Gram flour - 1 cup
  • Red chili powder - 1/4 tbsp
  • Oil - 1/2 tbsp
  • Baking soda - 1/4 tbsp
  • Salt to taste
  • Asafoetida - 1 pinch
  • Oil for deep fry
    For the Vada pav chutney
  • Garlic - 1/3 cup
  • Coconut - 1/4 cup (grated)
  • Red chili powder - 2 tbsp
  • Oil - 1 tbsp

    Cooking Time: 45 minutes

    Preparation Method:
  • To make vada pav. Heat oil in a pan and add mustard seeds, and curry leaves and asafoetida. When mustard seeds starts crackle add green chili, garlic and ginger paste and stir for 2mins then add mashed potatoes, salt, lemon juice and turmeric powder. Mix all the ingredients well and cook for 5mins and switch off the flame and keep it aside and let it cool completely. Once the mixture is cool, divide them into 8-9 equal portions and make smooth balls from it.
  • Method for making batter: Take a mixing bowl and add gram flour, chili powder, salt, baking soda, oil and asafoetida and add water to make thick batter or paste.
  • Heat oil in pan, now dip potato ball in gram flour batter and coat all the side and then carefully drop the balls into hot oil and fry until the outer layer is light brown. Take them out and drain on paper.
  • Method for making chutney: Heat oil in pan and add garlic, coconut and stir for 2-3mins over a medium flame. Let the ingredients cool down. Now, grind it in a blender till it is a smooth paste.
  • Slit the pav from the middle and apply green chutney on one side and vada pav chutney on other side and keep the vada in the middle. Serve hot with green chutney or tomato ketchup.
