Vegetable Poriyal

Recipe Brief Description : Vegetable Poriyal is colorful dish without onions and garlic. Mixed vegetables cooked with fresh grated coconut and little spice.
Recipe Ingredients

  • Beans - 2 cup (finely chopped)
  • Carrot - 1 cup (finely chopped)
  • Coconut - 3 tbsp (grated)
  • Green chili - 2 number (finely chopped)
  • Mustard seeds - 1/2 tbsp
  • Curry leaves - 1 spring
  • Oil - 2 tbsp
  • Salt to taste

    Cooking Time: 20 minutes

    Preparation Method:
  • Heat oil in a pan and pop mustard seeds.
  • Add the chopped vegetables, green chili and mix well. Cover it with a lid and cook the vegetables till they are tender.
  • Add salt to taste and the curry leaves. Simmer this for about 2 minutes.
  • Finally add the grated coconut and make it warm for 3 minutes.
