Recipe Brief Description : Vegetable Poriyal is colorful dish without onions and garlic. Mixed vegetables cooked with fresh grated coconut and little spice.
Beans - 2 cup (finely chopped)
Carrot - 1 cup (finely chopped)
Coconut - 3 tbsp (grated)
Green chili - 2 number (finely chopped)
Mustard seeds - 1/2 tbsp
Curry leaves - 1 spring
Oil - 2 tbsp
Salt to taste
Cooking Time: 20 minutes
Heat oil in a pan and pop mustard seeds.
Add the chopped vegetables, green chili and mix well. Cover it with a lid and cook the vegetables till they are tender.
Add salt to taste and the curry leaves. Simmer this for about 2 minutes.
Finally add the grated coconut and make it warm for 3 minutes.
